Low-Carb, Keto Strawberry Shortcake

Let's make keto strawberry shortcake! Layers of our perfectly moist yellow cake, fresh whipped cream, and sliced strawberries combine for the perfect summery treat…❤️ This keto strawberry shortcake is so easy to make and comes together quickly thanks to our yellow cake mix! 


  • 1 bag FitBake yellow cake mix, prepared
  • 1 cup heavy cream
  • 2 tbsp powdered sugar-free sweetener, or to taste
  • 1/2 tsp vanilla extract
  • 1 cup fresh strawberries, sliced


  1. Prepare cake batter according to package instructions in style of your choice.

  2. Bake according to package instructions. To make three layers as pictured here, line three 6-inch round nonstick pans with parchment paper and divide batter evenly between them. Bake at 325 for 17-20 minutes. Allow to cool completely.

  3. Beat cold heavy cream in a bowl with electric mixer until stiff peaks form. Add sifted powdered sweetener and vanilla, to taste.

  4. Layer cake with sliced strawberries and whipped cream, repeating for additional layers if applicable. Slice, and enjoy!
