Keto, Low-Carb Cookie Dough Cake made using our yellow cake mix and vanilla buttercream frosting. Perfectly moist chocolate chip vanilla cake is filled with pockets of edible cookie dough, then topped with a layer of our creamy vanilla buttercream frosting + extra cookie dough! 

INGREDIENTS:

  • 1 cup blanched almond flour

  • 1/4 cup powdered sugar-free sweetener

  • 1/4 teaspoon salt

  • 1/4 cup butter, softened

  • 1/2 teaspoon vanilla extract

  • 1/4 cup sugar-free chocolate chips

INSTRUCTIONS:

  1. Preheat oven to 350°F. Prepare yellow cake mix batter according to package instructions in the style of your choice.

  2. Fold in chocolate chips. 

  3. Spread batter evenly into a parchment paper lined 8x8-inch pan, and bake according to package instructions.  Allow to cool.

  4. Prepare cookie dough: combine all ingredients and stir until dough forms. Form into 9 balls.

  5. Using a knife or spoon, make 9 shallow holes throughout the surface of the cake. Slice each cookie dough ball in half, then place one half in each hole, so that the flat side is facing up.

  6. Frost over the cookie dough, covering the whole surface of the cake.

  7. Cut the remaining cookie dough into small pieces, and distribute on top of the frosting.

  8. Slice, and enjoy!
