Keto-friendly zucchini bread made easy using our versatile yellow cake mix! Perfectly moist with authentic flavor and texture. Makes one 8x4-inch loaf.

Zucchini Bread:


    • 1/4 cup cream cheese, softened
    • 1/4 cup greek yogurt
    • 3 tbsp powdered sugar-free sweetener
    • 1/4 tsp vanilla extract


    1. Stir cinnamon into dry yellow cake mix. Prepare cake batter according to package instructions in style of your choice.

    2. Shred zucchini and press out excess moisture with a paper towel.

    3. Fold shredded zucchini into the batter.

    4. Line an 8x4-inch loaf pan with parchment paper, and spread the batter in evenly. 

    5. Bake at 350°F for 40-50 minutes, or until toothpick inserted into center comes out with moist crumbs. Allow to cool completely before frosting.

    6. Frosting: Soften cream cheese and stir together with greek yogurt until smooth. Add sweetener and vanilla and stir again until smooth. Or, for an even easier option use our pre-made cream cheese frosting!

    7. Frost, slice, and enjoy!
