INGREDIENTS:
Zucchini Bread:
- 1 bag Fit Bake yellow cake mix
- 1 tbsp cinnamon
- 1 medium zucchini, shredded
Frosting:
- 1/4 cup cream cheese, softened
- 1/4 cup greek yogurt
- 3 tbsp powdered sugar-free sweetener
- 1/4 tsp vanilla extract
INSTRUCTIONS:

Stir cinnamon into dry yellow cake mix. Prepare cake batter according to package instructions in style of your choice.

Shred zucchini and press out excess moisture with a paper towel.

Fold shredded zucchini into the batter.

Line an 8x4-inch loaf pan with parchment paper, and spread the batter in evenly.

Bake at 350°F for 40-50 minutes, or until toothpick inserted into center comes out with moist crumbs. Allow to cool completely before frosting.

Frosting: Soften cream cheese and stir together with greek yogurt until smooth. Add sweetener and vanilla and stir again until smooth. Or, for an even easier option use our pre-made cream cheese frosting!
