This Keto-Friendly Red Velvet Cake makes the ideal Valentine…❤️ Sweet, good looking, and will never leave you.. except if you eat it all, of course 😅  

INGREDIENTS:

Cake:

  • 1 bag Fit Bake yellow cake mix
  • 1 tbsp unsweetened cocoa powder
  • 1/2 tsp white vinegar
  • Red food coloring or natural food coloring

Cream Cheese Frosting:

    Or to make your own:

    • 1 cup cream cheese, softened
    • 1/4 cup unsalted butter, softened
    • 1 cup powdered sugar-free sweetener
    • 1/2 tsp vanilla extract

    INSTRUCTIONS:

    1. Stir cocoa powder into dry yellow cake mix. Prepare cake batter according to package instructions in style of your choice, adding vinegar along with the wet ingredients. Add food coloring until desired shade is reached.

    2. Bake according to package instructions. To make three layers as pictured here, line 3 six-inch round nonstick pans with parchment paper and divide batter evenly between them. Bake at 325 for 17-20 minutes. Allow to cool completely before frosting.

    3. Frost with our new pre-made cream cheese frosting. Or to make homemade frosting:: Allow cream cheese and butter to come to room temperature, and then beat with electric mixer until smooth. Add sifted powdered sweetener and beat until thick and fluffy. Add vanilla.

    4. Frost cooled cake, slice, and enjoy!

    Note: one jar of frosting or frosting recipe is enough to frost 3 six-inch layers, including the top and sides of the cake, or enough to frost the top of 2-3 eight-inch sheet cakes.
