Keto Pumpkin Whoopie Pies made with only 6 ingredients 🎃 Pumpkin spiced cookie cakes surround our pre-made cream cheese frosting (or vanilla frosting) for a perfect low-carb, keto-friendly treat to welcome the fall season. This recipe will make about 7 large whoopie pies. 

INGREDIENTS:

INSTRUCTIONS:

  1. Preheat oven to 350°F. Line a baking sheet with parchment paper.

  2. Combine cake mix and pumpkin pie spice in a mixing bowl. Add pumpkin puree, oil, and eggs, and stir until smooth. 

  3. Use a 1.5-inch cookie scoop to scoop batter onto baking sheet about 3 inches apart. Flatten each ball. You should get about 14 total. Bake for 8-12 minutes, then allow to cool completely.

  4. One by one, turn half of the little cakes upside-down, fill with cream cheese frosting, then sandwich with another cake. Repeat until you have 7 whoopie pies. Enjoy!
