Keto Andes Mint Brownies! These will remind you of those "Andes Mint" chocolate candies, in keto-friendly brownie form. So easy and no-sugar-added using Fit Bake fudge brownie mix! Perfectly fudgy brownies topped with layers of creamy mint and rich chocolate ganache.
INGREDIENTS:
- 1 bag Fit Bake fudge brownie mix
- 1/2 cup + 1/3 cup heavy cream, divided
- 1/2 cup sugar-free white chocolate chips
- 1/3 cup sugar-free chocolate chips
- 1 tsp peppermint extract, or to taste
- Natural green food coloring (we used a combination of blue spirulina powder and turmeric)
INSTRUCTIONS:

Prepare brownie mix batter and bake according to package instructions, and allow to cool. Feel free to add some mint extract to the brownie batter for extra minty flavor!

Heat 1/2 cup of heavy cream over low-medium heat just until it starts to bubble. Add white chocolate chips, remove from heat, and stir until smooth. Add peppermint extract and green food coloring. Allow to cool.

Pour and spread mint ganache evenly on top of the brownies. Place in the refrigerator while you prepare the next layer.

Heat the remaining 1/3 cup of heavy cream over low-medium heat just until it starts to bubble. Add chocolate chips, remove from heat, and stir until smooth.

Remove the brownies from the refrigerator, and pour and spread chocolate ganache evenly over the mint layer.

Return the entire pan to the refrigerator for at least 2-4 hours or until the ganache sets.

Slice into 16 squares with a sharp knife.
