Keto Lemon Pound Cake made using our yellow cake mix and a special secret ingredient 🍋The secret to this perfectly moist, slightly dense, delightfully lemony pound cake is the ricotta cheese  trust us, it works. This recipe will yield two mini 3x5-inch loaves, or one standard 4x8 loaf. 



  1. Preheat oven to 350°F. Line two mini loaf pans with parchment paper.

  2. Combine ricotta, eggs, oil, lemon juice, lemon zest, and extract (if using) in a mixing bowl and whisk until smooth. 

  3. Add yellow cake mix and stir until combined.
  4. Distribute batter into mini loaf pans.

  5. Bake for 25-35 minutes or until toothpick inserted into center comes out with moist crumbs. Allow to cool.

  6. Spread each loaf with 3 tbsp of vanilla frosting and top with additional lemon zest. Slice, and enjoy!
