Keto Lemon Pound Cake made using our yellow cake mix and a special secret ingredient 🍋✨The secret to this perfectly moist, slightly dense, delightfully lemony pound cake is the ricotta cheese — trust us, it works. This recipe will yield two mini 3x5-inch loaves, or one standard 4x8 loaf.
- 1 bag Fit Bake yellow cake mix
- 1/2 cup ricotta cheese
- 3 large eggs
- 1 tbsp oil
- 2 tbsp lemon juice
- zest of 1 lemon
- 1/2 tsp lemon extract (optional)
- 6 tbsp Fit Bake Vanilla Buttercream Frosting
Preheat oven to 350°F. Line two mini loaf pans with parchment paper.
Combine ricotta, eggs, oil, lemon juice, lemon zest, and extract (if using) in a mixing bowl and whisk until smooth.
- Add yellow cake mix and stir until combined.
Distribute batter into mini loaf pans.
Bake for 25-35 minutes or until toothpick inserted into center comes out with moist crumbs. Allow to cool.
Spread each loaf with 3 tbsp of vanilla frosting and top with additional lemon zest. Slice, and enjoy!
