We're celebrating St. Patrick's Day with this Keto Grasshopper Poke Cake made using our chocolate cake mix! 🍀Perfectly soft & moist chocolate cake filled with pockets of our delicious chocolate frosting, all topped with a festive minty cream. This recipe will yield one 8x8-inch pan of cake.
INGREDIENTS:
- 1 bag Fit Bake chocolate cake mix, prepared
- 1/4 cup Fit Bake chocolate buttercream frosting
- 1 cup cream cheese
- 1/3 cup powdered sugar-free sweetener
- 1/2 tsp mint extract
- ~3/4 tsp natural green food coloring
- 1/4 cup heavy cream
INSTRUCTIONS:

Preheat oven to 350°F. Line an 8x8-inch pan with parchment paper.

Prepare chocolate cake mix batter according to package instructions. Optional: add 1/2 tsp mint extract to batter if desired, for extra minty flavor. Bake according to package instructions.

Remove cake from oven. While cake is still warm, poke holes throughout the cake with a toothpick, then spread with chocolate frosting. Allow the frosting to melt into the cake and holes. Allow to cool completely.

Combine cream cheese, powdered sweetener, mint extract and coloring in a large bowl. Beat until combined. Add heavy cream, beating with electric mixer on high until smooth and fluffy.

Spread mint cream over cake. Top with sugar-free chocolate chips if desired.

*For coloring, we used a combination of blue spirulina powder and turmeric. Feel free to use any green food coloring until desired color is reached.
