Keto Funfetti Cookies that are equal parts cakey, chewy, and filled with funfetti cake flavor, topped with a thick layer of our low-carb vanilla buttercream frosting. October 1st is National Homemade Cookie Day, so we're celebrating with this guilt-free and super easy recipe. Only 5 ingredients from start to finish! This will yield about 16 large frosted cookies.
Per cookie including frosting: 90 calories 8g Fat / 1g Net Carb / 2g Protein / 1g Fiber / 0g Sugar
INGREDIENTS:
- 1 bag FitBake yellow cake mix
- 3 tbsp unsalted butter, melted
- 3 large eggs
- 2 tsp rainbow sprinkles (optional)
- ~1 tsp FitBake vanilla buttercream frosting per cookie
INSTRUCTIONS:
Combine yellow cake mix, melted butter, and eggs in a large bowl and stir until smooth. Add sprinkles if using, and stir until combined.
Preheat oven to 350°F. Line a baking sheet with parchment paper. Use a 1.5-inch cookie scoop to scoop dough onto baking sheet about 3 inches apart. Bake for 8-12 minutes, then allow to cool completely.
Spread cookies with vanilla frosting, then top with extra sprinkles if desired. Enjoy!
