Keto Chocolate Chip Pumpkin Cake made easy using our yellow cake mix 🎃Our yellow cake mix combines perfectly with a bit of fall spice and unsweetened pumpkin puree to create a deliciously easy, keto-friendly pumpkin cake. The chocolate chips are optional, but if you haven't tried the chocolate + pumpkin combination, you basically haven't lived... (at least in our opinion!)
INGREDIENTS:
- 1 bag Fit Bake yellow cake mix
- 1 tsp pumpkin pie spice
- 1/3 cup unsweetened pumpkin puree
- 3 large eggs
- 1/4 cup oil, or unsalted butter, melted
- 2 tbsp sugar-free chocolate chips
- ~1/2 cup Fit Bake frosting of choice
INSTRUCTIONS:

Preheat oven to 350°F. Line an 8x8-inch square pan with parchment paper.

Combine cake mix and pumpkin spice in a mixing bowl. Add pumpkin, eggs, and oil or butter, and stir until combined. Fold in chocolate chips.

Spread batter evenly into lined pan, and bake for 25-30 minutes. Allow to cool.

Frost with Fit Bake frosting of choice, whipped cream, or any other toppings of choice. Slice, and enjoy!
